Serrano Ham (Jamon Serrano)
Serrano ham is a traditional delicacy from Spain, from white pigs. Its name literally means jam from the mountains, where the drying methods originated. It is not smoked, but cured with salt, and then dried out for at least half a year if not more in secaderos. This ham is wonderful thinly sliced in sandwiches or appetizers. This ham is fully-boned. Bleu De Gex (pre order)
This cheese comes from cows that graze the pastures of the Jura Mountains in Comte 6,000 feet above sea level. The climate is perfect for the cows to have their milk give a hint of mushrooms and tarragon flavors in it. The Bleu de Gex became a part of the AOC in 1977. It usually ages around one to three months before it is ready for sale.
